first soak white channa for full night or 8 hours then put in a cooker add 2 glass water salt, and amla then lid the cooker and put on full heat after 1 whistle reduce the heat for 15 minutes and off heat
cut onion and tomatoes very finely or you can grind in a mixer separate separate
cut green chilly finely and ginger cut lengthwise
take a wok put 4 tbs oil let it hot
add cumin seeds,black cardamom,cloves, bay leaf, and cinnamon stick sauté for a minute on medium heat
then add ginger garlic paste and sauté for 30 seconds put onion and cook until pink colour
now put red chili powder,green chili,garam masala and mix everything and cook until mixture start living pan
then add tomatoes and mix on low heat and cook oil comes separate then add boiled while channa
give a good mix cook on low heat for 5 minutes garnish with ginger and coriander leaves
now take a mixing bowl put white flour in it add curd , salt as per taste, little ajwain, sugar and mix and make a soft dough with soda water keep aside for 10 minutes
take a wok put oil for frying bhatura for frying bhatura oil should be very hot
make balls from dough and roll with rolling pin like puri put in hot oil on full flame split and fry from both side
